1. I would think the smell would indicate a not-fresh fish.

   • They actually rinse the fish in a weak hydrogen peroxide solution to mask the smell

     • Thank you. I did not know that.

       • That whole Culinary Doctorate Degree. It’s a curse sometimes, because there are things I will not eat and will not order on certain days
