Instant Pot Recipes

I purchased an Instant Pot a week or so ago.  I’ve used it a few times.  I made a roast and a chicken and rice dish and a pot of chili so far. All were really good and easy.  The ‘easy’ part is my favorite.  I’m going to attempt a pot of chicken noodle soup tonight.  I’ve never been able to make chicken soup. It always ends up as a chili-like consistency.  It tastes good but never looks like soup.  

Anybody have any good and ‘easy’ Instant Pot recipes they like?

  2. Instant pot chicken soup:
    Press “saute” and wait until it says “hot”.
    Add 1 tbp of oil and brown 2.5-3 lbs of chicken (patted dry) to develop a nice fond (brown bits stuck on the bottom of the pan).
    Remove chicken and deglaze the fond with 1/2 cup of water or sherry. Use a wooden spoon to get everything unstuck from the bottom.
    Put Chicken back in and add 2 small (or 1 large) onions, 2 carrots, 2 celery stalks, 4 cloves garlic, 2 bay leaves, 1 tsp whole peppercorns, 2 tsp salt (leave everything whole). If you want to add anything else (like thyme or ginger or noodles) throw it in now. Add 4.5 cups of water. Close the pot, set on “soup” and wait.
    When it’s done, vent the pressure. When it’s safe, strain, chop up the chicken, carrots and celery to bite size chunks (discard everything else), skim off fat from the broth (if you want),, Reassemble your soup and salt to taste.
    * I suggest cooking your noodles separately and adding it at the end instead of cooking it with the soup as they tend to be mushy and leech starch into the final product if you cook it together.

    • It is a pressure cooker that can also be used as a crockpot. You can use the Sautée mode to brown your mean and then switch to either pressure cook or slow cook. Very versatile device.
