  1. Here’s a tip: when the banana is brown and mushy, don’t throw it away. Mash it, add some self raising flour and corn starch and mix till you get a batter kind of consistency. Add a bit of sugar if you want, but add this before adding the flour and starch. Then deep fry until brown. Makes for awesome traditional crushed fritters. The brown bananas are best for this.

  2. The yellow band would be a fraction of that width in Florida! Hot climates…..overripe bananas in a flash!
