The salt absorbs the high level of moisture in the frog legs and causes them to shrink ever so slightly. Since they are tightly muscled with long thin extremities the movement is very(!) noticeable. Almost the same idea as when salt “melts” a slug or snail.
Klingons would go bonkers over those quivering hunks of raw meat dancing with joy over the idea of becoming lunch.
